Raw Beet and Carrot Salad

1 raw beet

1 raw carrot

12 walnuts

¼ cup golden raisins

2 cloves of garlic

3 tsp. fresh parsley, chopped

1 tbsp. mayonnaise to taste

Peel the beet and carrot with a vegetable peeler. Grate both on medium. Add chopped walnuts, raisins, garlic and salt. Toss with mayonnaise and parsley. Enjoy!
