Raw Kale, Beet, Apple Salad with Goat Cheese and Walnuts
1 bunch kale, rinsed, chopped
2 raw beets, peeled and chopped. Have fun with variety of beets. Golden and candy cane beets are a colourful addition.
2 apples, cored and chopped. Again have fun with the variety. A Granny Smith adds a nice bit of tartness, a Golden Delicious a mellow touch.
1/4 cup of goat cheese, crumbled
1/2 cup chopped walnuts
3/4 cup olive oil
1/4 cup apple cider vinegar
In a large salad bowl, combine oil and vinegar. Add beets and apples. Mix together. Add kale. Mix again. Place salad on plates. Sprinkle with goat cheese and walnuts.
Put the kale, nuts, and parmesan into a bowl and toss. Add the live oil, maple syrup, squeeze on the lemon and liberally apply the cayenne, or not if you’d prefer. Stir together and done. As with the above, I add sliced steak or chicken. Awesome!
